Antipasto Slice

This antipasto slice is like eating a grazing board on the go. I like to make it when I have grazing board odds and ends. Sometimes when I'm about to make a grazing platter I put a handful of ingredients aside so I can make this beauty the next day.

Ingredients

  • 1 1/2 cups antipasto ingredients e.g. cheeses (brie, blue, cheddar), meats (salami, prosciutto), sun-dried tomato, olives etc. Sometimes I even throw in bits of quince paste or a swirl of red capsicum dip or pesto. I usually just use whatever I have leftover from a grazing board.
  • 1/2 cup of self-raising flour
  • 1/2 cheese (I like to use creamy blue or aged cheddar)
  • 4 eggs
  • 1 tbsp milk
  • 1/4 salt
  • 1/8 pepper
  • 1 tbsp olive oil or sun-dried tomato oil

Method

  1. Preheat oven to 180C.
  2. In a medium bowl whisk eggs, milk, salt, pepper, self-raising flour.
  3. Pour the mixture into a lined baking tray.
  4. Place the antipasto ingredients across the mixture, and spoon the oil over the top.
  5. Bake for 15-20 mins and enjoy!
