It’s not every day that you are wowed by a bowl of pho but Pho Thin (a popular Hanoi franchise) recently opened their first store in Melbourne and it may very well knock your socks off.
I had their signature ‘rare beef pho’ and it’s a little different to pho I’ve had in the past.
The beef is stir-fried in garlic before being added to the flavoursome broth with flat rice noodles and loads of chopped spring onion and coriander. No bean shoots? Good riddance, I never liked them anyway. This was like the Pho of my dreams. The broth was full of flavour but tasted really clean and they don’t put MSG which means I don’t have a headache later which is tops.
I made the rookie mistake of asking for some Chinese doughnuts on the side (*faceplant) These are obviously dau chao quay (Vietnamese doughnuts) derrr. The lady at the counter politely smiled and proceeded to hand me doughnut instead of saying ‘no pho for you!’ so I was forever grateful.
You grab your water and utensils at the front where you order and they have chilli and lemon on the table. You can dip your vietnamese doughnuts (see I’ve learnt) into the broth or submerge them in the broth until they get soggy, entirely up to you.
