When you think of amazing pasta in Melbourne, Tipo 00 comes to mind. The pasta is handmade and they use only the finest ingredients. It’s a small place but has been packed all hours of the day for many years, which speaks volumes. It’s likely once you’ve tried it, you will be returning back for more.
To start they serve you a slice of herbed garlic focaccia, baked fresh, straight from the oven with some homemade ricotta. It’s so good – move over bread and butter this is the way to my heart.
The polenta chips were cut thick and were topped with grated parmesan.
The squid ink tagliolini was black in colour and had a beautiful seafood sauce with pieces of tender squid, finely grated bottarga (cured fish roe) and salty pops of salmon roe.
If you love a bit of Bolognese, this wild boar Bolognese was full of flavour and went perfectly with the silky pappardelle.
I heart Tipo 00!
