Wilson & Market has opened as part of Prahran Market celebrating seasonal produce and quality wines. The lovely Paul Wilson is back with a super restaurant housing a brasserie, seafood bar, café, bar and regular restaurant dining space. There’s a lot to love about this place, it’s casual but elegant and has some awesome art decorating the walls.
To start, the 28 hour fermented soir sourdough was baked in a wood fire oven in-house and served with a delicious salty seaweed butter. You know it’s going to be a good night when even the bread and butter is sensational.
Next up was a tower of Artisanal rock oysters. There were three types: Pambula lake, clyde river and wonboyn lake. All local and all delicious. They were served with a celeriac and horseradish vinegarette, which gave the creamy oysters a bit of kick. It went perfectly with a glass of T’gallant Pinot Grigio.
The house orange wood smoked petuna ocean trout was delightful. It was cut beautifully and we got to see the firewood used to create the beautiful flavour. It was accompanied with a lovely smooth devilled egg and a side of pickled veg.
The chestnut wood roasted rare breed suckling pig came out to the table, trotter and all with a big carving knife jabbed in the centre. The meat was tender when we cut into it and you could hear the crunching sounds as people began to eat the crispy crackling. The sauce was full of flavour and this dish was paired wonderfully with a glass of Saltram Barossa Shiraz. Talk about winter warmers.
The stuffed porchetta was soft and moist and was accompanied by a fennel and radicchio salad with mustard fruits. More of that crispy crackling was heard across the table.
The potatoes were covered in a black tahini and had a lovely charcoal flavour. When we cut into the potatoes, they were a bright violet purple colour, which was a surprise.
The Transition farm heirloom pumpkin was amazing. It was roasted beautifully and served with brown butter & sage.
With all the giant pumpkins around how could we not do this.
The bromley apple pie was served with a scoop of cheddar ice cream. Yes you read correctly. Cheddar. Icecream. It was delicious. It tasted like cheddar cheese as you would imagine. It was nice on its own and amazing altogether with the apple pie. There was also two heavenly pouring pots. One was filled with muscatel sauce (like a jammy grape sauce) and the other had crème anglaise (like a creamy vanilla custard). It was the perfect finish to our wonderful feast.
Wilson & Market is setup in a perfect location within Prahran Market because it embraces the simplicity and value in fresh produce (like the market) and highlights the quality ingredients.
Also their toilets have unexpectedly been a popular spectacle since the place has opened. The walls look like lava lamps so be sure to check them out.
